Jamaican Seafood Medley
Marinade:
2 tbsp packed brown sugar
1 1/2 tbsp orange juice
1 1/2 tbsp lime juice
2 cloves garlic, minced
1/2 tsp ginger, minced
1 tsp orange peel, grated
1 tsp lime peel, grated
1 tsp salt
1/2 tsp pepper
1/8 tsp ground cinnamon
dash of ground cloves
1/2 tsp tabasco sauce
1/2 lb orange roughy, bite size pieces
1/2 lbs sea scallops cut in 1/2
1/2 lb shrimp
1 tbsp olive oil
3/4 baby corn, snapped in 1/4
1/2 green pepper, julienned
Combine marinade pour over seafood. Cover and refridgerate for 2 hours. Drain seafood discard marinade. Saute vegies and seafood in olive oil over medium heat for 15 minutes or until done.
