Beef and Vegetable Stew
2 lbs beef stew
1 tbsp olive oil
1 onion, sliced
1 green pepper, julienne sliced
6 celery stalks
4 cups carrots
3 cloves garlic
1 cup V-8 juice
1 tsp Heinz 57 steak sauce
1 tsp Worcestershire Sauce
3/4 cup beef broth
1 tsp dried parsley flakes
1 tbsp cornstarch
Brown beef in oil. Place mat and drippings in crock pot. Place vegies on top of meat, mis liquid ingredients and parsley and pour into pot. Cook on high for 7-9 hours. One hour before serving mix cornstarch with 1 tbsp water and stir into stew until smooth.
