Black Beans and Rice 

1 tsp EVOO

1 red onion, chopped

2-4 cloves of garlic

2 cups rice

3 cups chicken broth

1 tsp cumin

3 1/2 cups canned black beans, drained

In medium saucepan add EVOO and then add onion and garlic and saute till onion is translucent.  Be careful not to burn the garlic.  Add rice (uncooked) to pan and saute about 2 minutes.  Add broth and bring to boil, cover and lower heat and let sit for 20 minutes.  Add the spices and black beans when rice is cooked.

OR

Cook rice in rice cooker with broth, or in saucepan as explained above.  While rice is cooking saute onion and garlic.  When rice is done mix it with the onion and garlic and remaining ingredients.
