Broccoli, Rice, Cheese and Chicken Casserole
2 cups rice
3 cups water
2 pieces of chicken, shredded
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1/4 cup butter
1 cup milk
16 oz broccoli
8 oz cauliflower
1 small red onion
1 lb shredded cheese
In saucepan add water and rice and bring to boil. Shut off heat and cover with lid and let sit for 20 minutes. If you have a rice cooker that would be easier and better!
In a 9x13 pan mix all ingredients together and bake at 350F for 30-35 minutes.
Cover with extra cheese if you like for the last 5 minutes.
