Caramel Baked Apple 

1 tbsp chopped dates

1 tbsp coarsley chopped pecans

1 tbsp coarsley chopped raisins or cranberries

1 tbsp packed brown sugar

1/4 tsp cinnamon

1/8 tsp nutmeg

2 large apples

1 tsp cold butter, cut into small pieces

2 tbsp fat-free caramel sauce

Pour 1/4 cup water in 8 inch square baking dish.

Preheat oven to 375F.

Toss together dates, raisins, pecans, brown sugar, cinnamon, and nutmeg in small bowl.  Core each apple with small knife without cutting through to the bottom.  Peel 1/2 inch of skin from top of apple and fill apples with mixture.  Stand in baking dish and dot with butter.

Cover apples loosely with foil tent and bake basting occasionally with pan juice, until almost tender, about 40 minutes.  Uncover and bake until apples are tender, about 15 minutes.  Drizzle caramel sauce on apples.
