Chicken Couscous Wraps wih Red Pepper Mayonnaise 

1/2 tsp salt

1/2 cup whole wheat couscous

1/4 cup chopped fresh parsley

1/3 cup chopped roasted red peppers

1/4 cup light mayonnaise

1 clove garlic, minced

pinch cayenne pepper

2 boneless skinless chicken breasts

1/4 tsp pepper

2 small zucchini

4 large whole wheat flour tortillas

1 cup alfalfa sprouts

In saucepan bring 1/2 cup water and pinch of salt to a boil.  Remove from heat and stir in couscous, cover and let stand for 5 minutes.  Fluff with fork after 5 minutes and stir in parsley.

In food processor, whirl red pepper with mayo until smooth and then stir in garlic and cayenne pepper.

Sprinkle chicken with pepper and half of remaining salt.  Place on greased grill over medium-high heat.  Close lide and grill turning once until no longer pink inside.  Cut chicken in strips.

Diagonally cut zucchini into 1/4 inch thick slices.  Brush with oil and sprinkle with salt.  Grill over medium-high heat, turning once, until grill marked and translucent.  About 4 minutes.

Cut tortillas in half and spread each half with red pepper mayo.  Layer couscous, chicken, zucchini and sprouts down the centre.  Roll up the sides to form a cone.  Secure the bottom with paper or long toothpicks.
