Garlic Mashed Potatoes
2 1/2 lbs unpeeled red potatoes, quartered
6 oz butter, room temp
2 1/2 oz Romano cheese, grated
4 large garlic cloves, minced
1 1/4 tsp salt
1 1/4 tsp oregano
Cook potatoes in water until tender but still a bit firm, drain. Stir in remaining ingredients and mix well.
