Greek-Style Zucchini
1/4 cup fresh lemon juice
2 tbsp olive oil
1 1/2 tsp Greek seasoning
6 medium zucchini, trimmed and halved lengthwise
2 small tomatoes, diced
1 (2.25 oz) can sliced black olives, drained
2 tbsp feta cheese
fresh chopped parsley (optional)
Preheat grill to medium-high heat. Combine lemon juice, olive oil, and Greek seasoning in a small bowl; brush mixture over cut side of zucchini.
Grill zucchini, cut side down, on a grill rack coated with nonstick cooking spray, for 8-10 minutes or until tender.
Combine tomatoes, olives, and feta cheese in a small bowl; spoon over zucchini. Garnish with fresh chopped parsley, if desired, serve immediately.
