Herb-Crusted Pork

1/2 cup orange juice

1/2 cup chicken stock

2 tbsp liquid honey

2 garlic cloves, minced

1 lb pork tenderloin

1 1/2 tbsp grainy mustard

1/4 - 1/3 chopped fresh parsley

2 tbsp chopped fresh sage

1 tbsp coarse ground pepper

Combine first 4 ingredients.

Add pork.  Turn to coat.  Cover.  Marinate in fridge for at least 4 hours or overnight, turning several times.  Drain, reserving marinade.

Spread mustard over pork. 

Combine parsley, sage, and pepper in shallow dish.  Roll pork in parsley mixture until completely coated.  Spray with cooking spray.  Place pork on greased wire rack on baking sheet with sides.  Bake in 375F oven for 45-50 minutes until meat is cooked.  Cover with foil.  Let stand for 10 minutes.  Put reserved marinade into medium frying pan.  Boil on medium-high for 5-7 minutes until slightly reduced and thickened.  Serve sauce with pork.
