Mix together to create batter for crepes:
1 cup flour
4 eggs
1 tbsp oil
1 tsp salt (optional)
1 cup water
Mix together to create the filling:
2 cups cottage cheese
2 tbsp parmesan cheese
3/4 tsp salt
1/4 tsp pepper
2 eggs 2 cups mozzarella cheese
Mix together to create sauce:
2 lbs ground beef
2 can tomato soup
1/2 tsp Italian seasoning
1/2 tsp garlic powder
1/4 cup brown sugar
Crepes:
Mix the crepe ingredients together. Have a pan on medium heat warming as you mix ingredients. Take 1/4 cup of the batter and drop into the hot pan. Pick pan up and start to swirl pan to move the batter into a larger and larger circle. When the dough is ready to be flipped it will easily be picked up by a spatula. Flip the dough and leave on the other side just long enough to warm. Set aside to cool when finished.
Filling:
Mix the filling ingredients together well.
Sauce:
Cook ground beef until done over medium high heat. When finished cooking drain off any grease that there may be and add the rest of the sauce ingredients.
Assembly:
Put about 1/4 cup of sauce mixture on the bottom of a 9x13 pan to prevent crepes from sticking to pan. Take some of the filling and make a long inside each crepe. Go on to roll the crepes up like you would a taco. Place each crepe side by side in the 9x13 pan. Then pour remaining sauce over crepes.
Bake at 350F for 30 minutes.
