Orange Pork
1 tbsp cooking oil
3 lbs pork chops
salt, sprinkle
pepper, sprinkle
2 cups orange juice
2 tbsp orange marmalade
12-18 pitted dried prunes
10 oz can of mandarin oranges, drained
Cook pork for about 2 minutes per side until browned. Sprinkle with salt and pepper.
Add orange juice, marmalade and prunes. Stir. Cover. Simmer on medium-low for about 1 hour or until tender.
Add oranges. Stir until heated through.
