Sesame Chicken
Batter:
2 tbsp flour
2tbsp cornstarch
1/4 tsp baking soda
1/4 tsp baking powder
2 tbsp soy sauce
1tbsp chicken broth
2 tbsp water
1 tsp vegetable oil
dash seasame oil
Sauce:
1 lb chicken cubed
1 cup chicken broth
1 cup white sugar
2 tbsp vinegar
2 tbsp soy sauce
2 tbsp sesame oil
1 tsp chile paste
1 clove garlic
1/4 cup cornstarch
1/2 cup water
Garnish:
2 tbsp toasted sesame seeds
Sift flour and 2 tbsp cornstarch, baking soda and baking powder. Pour in soy sauce, chicken broth, 2 tbsp water, vegetable oil and dash of sesame oil, stir until smooth. Stir in chicken until well coated, cover and refrigerate for 20 minutes. Meanwhile bring chicken broth, sugar, vinegar, soy sauce, sesame oil, chile paste and garlic to a boil. Dissolve 1/4 cup cornstarch into 1/2 cup water and stir into boiling sauce. Simmer until thickens and clear. Reduce heat and keep warm.
Heat deep fryer. Drop battered chicken piece in a few at a time until golden brown, 3-4 minutes.
To serve pour sauce over chicken and sprinkle with toasted sesame seeds.
