 Spinach Salad with Orange Vinaigrette

Salad:

2 cups fresh or baby spinach

1/2 cup fresh sliced msuhrooms

1/2 cup sliced red onion

Vinaigrette:

2 1/2 tbsp orange juice

1 tbsp red wine vinegar

1 1/2 tbsp EVOO

1/4 tsp pepper

1/2 tsp salt (to taste)

Combine orange juice and vinegar.  Add oil, salt and pepper.  Mix well.
