Squash with Garlic-Oregano Dressing 

4 medium yellow squash, sliced

3 medium zucchini, sliced

4 tbsp olive oil, divided

1/2 tsp salt, divided

1/4 tsp pepper, divided

1/4 cup red wine vinegar

2 cloves garlic, minced

1 tbsp capers, optional

1/4 tsp dried oregano

Preheat grill to medium heat.  Brush yellow squash and zucchini with 2 tbsp olive oil, 1/8 tsp salt, and 1/8 tsp pepper.

For garlic-oregano dressing, combine red wine vinegar, remaining 2 tbsp olive oil, garlic, capers (if desired), oregano, remaining 1/8 tsp salt and pepper.  Set aside

Gril on grill rack coated with nonstick cooking spray over medium heat for 5-6 minutes on each side or until tender.  Drizzle dressing over squash and serve immediately.
