Thai Green Curry Chicken 

3/4 kg chicken breast, or sirloin beef cubed

3 tbsp oil

1 cup eggplant, cubed

1 red and green pepper, cubed

1 can coconut milk

6 tbsp green curry paste

3 tsp fish sauce

3 tsp sugar

1 spice packet

2 tsp lime juice

On high heat add oil in frying pan.  Add vegies and fry for 1 minute.  Set aside.  Stir fry meat for 5 minutes.  Add 1/4 - 1/2 cup curry paste to meat.  Stir fry for 1 minute.  Stir coconut milk and add to mixture.  Lower heat and simmer 3 minutes.  Add vegies and remaining ingredients, simmer 5 minutes.
