Tofu Stir-Fry 

3 oz firm tofu (1/5 block)

1/2 onion, thinly sliced

1/2 can sliced mushrooms

1/2 cup fresh spinach

1 tbsp water

2 tbsp olive oil

1 clove garlic, chopped

1/2 cup sliced zucchini

1 tbsp soy sauce

Dry tofu, let sit for 20-30 minutes.  Cube tofu and stir fry in olive oil.  Add onion and garlic.  Cook 3-4 minutes.  Add mushrooms and cook until done.  Add zucchini and cook for a few minutes.  Add spinach, soy sauce, and water and stir well.  Cook 2-3 minutes longer.
